from Best of Bridge: Kitchen Simple
This simple supper is a favorite for Sarah and Greg, Emily’s cousins, who love a classic and want to eat a great meal with their young family.
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
1 tbsp canola oil
1⁄4 tsp each salt and black pepper
1 package (1 lb/500 g) honey garlic sausages
3 tbsp honey mustard or Dijon mustard
4 sausage or brioche hotdog buns, split
1⁄2 cup shredded mozzarella-Cheddar cheese blend
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss peppers and onion with oil, salt and pepper. Place on prepared pan and add sausages. Roast for about 25 minutes, turning sausages halfway through, until meat thermometer reaches 165°F (74°C) when inserted into sausages.
Spread honey mustard inside sausage buns. Tuck a sausage into each bun along with peppers. Sprinkle each with some cheese and return to baking sheet. Return to oven for about 5 minutes or until buns are toasted and cheese melts.
Serves 4.
Tip: Use any of your favorite fresh sausages for this recipe.
Nada’s Tips & Tricks: Such a simple but amazingly good recipe – perfect pairing with a hot bowl of soup or to serve some hungry game night enthusiasts! Change up the sausages (from maple to spicy) and change up the mustard (honey Dijon or spicy) and you’ve got some yummy variations.
