Crispy Chicken Cracky with Honey Mustard Dunk

Crispy Chicken Cracky

Get Ready: baking sheet, sharp knife, cutting board, medium bowl, dry measures, microwave-safe bowl, measuring spoons, mixing spoon, plastic freezer bag, oven mitts, wire rack

Ingredients

4 boneless, skinless chicken breast (about 1 lb/454 g)

¼ cup (60 mL) margarine or butter

1 tsp (5 mL) Worcestershire sauce (optional)

½ tsp (2 mL) salt

¼ tsp (1 mL) pepper

2/3 cup (150 mL) soda cracker crumbs (see note)

Directions

Place the oven rack in the centre position. Turn the oven on to 400F (205C). Lightly grease the baking sheet. Cut each chicken breast with the knife into 6 chunks or strips on the cutting board. Place in the medium bowl.

Microwave the margarine or butter in the microwave-safe bowl on high (100%) for about 30 seconds until melted. Add the Worcestershire sauce, salt and pepper. Stir with the mixing spoon. Drizzle the margarine mixture over the chicken. Stir until well coated.

Put the cracker crumbs into the bag. Put 3 or 4 pieces of chicken at a time into the crumbs, shaking until well coated. Place the coated chicken on the baking sheet. Bake in the oven for 18 to 20 minutes until crisp and golden brown. Use the oven mitts to remove the baking sheet to the wire rack. Cool.

Makes 24 chunks.

Note: To make crumbs, place the crackers in a plastic freezer bag. Roll with a rolling pin.

Honey Mustard Dunk

Get ready: dry measures, measuring spoons, small bowl, mixing spoon

Ingredients

½ cup (125 mL) mayonnaise or salad dressing

2 Tbsp (30 mL) liquid honey

2 tsp (10 mL) prepared mustard

Directions

Combine all 3 ingredients with the mixing spoon in the bowl until smooth. Makes 2/3 cup (150 mL) dip.

Nada’s Tips & Tricks: An easy recipe for kids to play with – add family favourite spices to the chicken (we tried curry, garlic powder, and Montreal steak spice…three different tastes to change things up). Use flavoured infused honey or different mustards like Dijon to give the dip a little punch. The grandkids love making this for the family!
