Ultimate Nacho Bar

This spread will score a big win with your family and friends while watching your favourite teams mix it up. Choose the toppings you want to offer…or put them all in the game! It’s easy to scale this help-yourself bar up or down, depending on how many you’re serving by increasing the quantity of each ingredient and/or the number of toppings offered. Keep the fillings on the lighter side if your gathering is between meals, or add more substantial toppings if it’s intended to be the meal. Throw some beverages on ice, and you’ve got yourself a party!

Ingredients

Basics:

Queso cheese dip

Tortilla chips, various shapes and sizes

Lighter Toppings:

Chopped bell peppers

Chopped cilantro

Chopped tomatoes

Corn (fresh or frozen, cooked or canned)

Crumbled Cotija (white Mexican) cheese

Green onions

Lime wedges

Shredded cabbage and/or lettuce

Sliced fresh or pickled jalapenos

Slice olives (black and/or green)

Substantial toppings:

Beef and black bean chili

Beef mixture only

Shredded cooked chicken

Pulled pork

Beans (black, kidney, pinto, chili), canned, rinsed and drained

Sauce:

Guacamole

Old El Paso sauces

Salsa

Sour cream

Directions

Arrange cold toppings around the dip and tortilla chips. Heat substantial toppings and serve immediately, keeping a close eye on the amount of time it is away from the heat.

Nada’s Tips & Tricks: I love ideas like this…serves as an inspiration to zero in on a theme and make it your own. If you have small cheese or slow cook plug-in or candled pots, that will keep the substantial items warm longer. Just give it a good stir every 15 minutes to keep from developing a crusty bottom. If this is a meal, add taco shells with the substantial toppings. Can’t find Cotija? Use shredded nacho cheese. This is a perfect idea for backyard bbq’s – while the grill masters are hard at work, your family and friends will be enjoying the spread.
