from Ás an Abhainn Mhóir
Quintessential Nova Scotia sweet bite, you’ll find these biscuits everywhere. For a while, even Tim Horton’s was selling them!
Ingredients
2 cups rolled oats
1 cup flour
1 cup brown sugar
½ tsp salt
½ tsp baking soda
½ cup soft butter
¼ cup boiling water
Directions
Combine dry ingredients except baking soda, and mix in butter. Dissolve baking soda in boiling water, add to mixture, and continue to mix and cut with a knife. Add more water if needed.
Mold with hands and roll out into a long wedge. Chill dough in the fridge.
Slice the dough about ¼-inch thick. Place on an ungreased cookie sheet and bake in a 400F oven for 10-12 minutes.
Nada’s Tips & Tricks: I had many variations of this recipe throughout Nova Scotia – some added drizzles of chocolate and others included flaked coconut. Serve with local homemade jams or fresh cheese for a decadent bite.
