Old Fashioned Molasses Buns

In The Promise, Erith loved to bake for the kids. In one scene when Danol comes to find her in St. John’s she had molasses buns cooling on the counter, and here is the recipe she would have followed.

Ingredients:

5 cups flour

1 tsp cloves

1 tsp allspice

1 tsp ginger

1 tsp cinnamon

1/2 cup butter

2 tbsp shortening or lard

1 cup molasses

1/2 cup sugar

1 cup hot water

2 tsp baking soda

Instructions:

Preheat the oven to 375 degrees.

Sift together flour and spices and lay aside.

Mix butter, lard, molasses and sugar until creamy. Stir baking soda in hot water and pour on the mixture. Add dry ingredients and combine.

Chill dough for thirty minutes in the fridge. Shape into balls and place in grease muffin tins or on a cookie sheet lined with wax paper.

Bake for 20 minutes. 

NOTE: I substitute flour for Gluten Free all-purpose flour and reduce the cooking time by 3 – 5 minutes.

Nada’s Tips & Tricks: These are yummy bun-muffins.  We had them with roast beef and roasted vegetables…hearty and filling.  Have them with your morning coffee, warmed up and slathered with butter!
