Here’s a family recipe from my sister-in-law for potato salad. It’s become a staple summer dish for us for many years now.
Ingredients:
½ cup sugar
1 Tbsp flour
1 tsp Dijon mustard
1 Tbsp salt
2 eggs, slightly beaten
2/3 cup vinegar
2 Tbsp water
6 large potatoes, peeled & diced
1 cup chopped celery
½ cup minced onions
3 hard boiled eggs, diced
Chopped chives
Directions:
In top of double boiler, mix sugar, flour, mustard and salt. Add beaten eggs, vinegar and 2 tablespoons of water. Bring to boiling while stirring the mixture in the double boiler until thickened.
Combine with the rest ingredients in a large bowl. Garnish with chopped chives.
Nada’s Tips & Tricks: There are so many recipes for potato salad but I know you’ll want to try this one…the mixture poured on the potatoes makes the dish creamy while the rest of the ingredients hold their shape. I used red onions for colour. Watch the vinegar quantity – start with 1/3 cup and taste before adding more. Serve either hot or cold. Add this to your next barbecue – it’ll be a hit!
