Grilled Shrimp Cubano Salad

Ingredients (one serving):

• 2 heaping tablespoons Smokin Jon’s Cubano BBQ Sauce
• 1/8 cup Orange juice
• Medium bowl of fresh spinach and arugula
• 1 large Cremini mushroom, sliced
• 4 mixed cherry tomatoes, halved
• 1 baby cucumber, sliced
• ¼ Pepper, sliced
• 1 boiled egg, halved
• Wild Argentinian shrimp (grilled skewer)
• 2 orange wedges 

How to prepare:

•Layer spinach and arugula on plate, add mushrooms, cherry tomatoes, cucumber, pepper, and boiled egg
•For salad dressing, mix BBQ sauce with orange juice, shake well
•Add grilled shrimp skewer on top of salad and drizzle with dressing
•Garnish with orange wedges and enjoy!

Nada’s Tips & Tricks:  Marinate the shrimp in the Cubano BBQ Sauce before cooking.  This adds a little extra kick and flavour profile to the salad. Grill it on the bbq, sauté it in a frying pan or bake it in the oven.  Perfect dish for entertaining on the back deck this spring.  For a heartier meal, we paired the salad with cod cakes and onion rings.  Yum!
