Coconut Tea Bites

We love having little treats that require super-low effort. If you do too, you’ll love these no-bake bites! They’re the perfect little snack with a cup of tea.

Ingredients

1 cup organic shredded coconut

1 cup organic almond flour

¼ tsp table salt

½ cup coconut oil, melted

1/3 cup agave nectar

½ tsp vanilla

1/3 cup chocolate chips

Directions

Mix coconut, almond flour and salt in a small bowl.

Combine wet ingredients in a medium-sized bowl. Add the dry ingredients and mix well. Stir in chocolate chips.

Press into mini-muffin tins. Freeze for one hour.

Note: The coconut is also really good toasted! Keep the bites in a sealable container or plastic bag in the freezer.

Makes 12 little cookies

Nada’s Tips & Tricks: Don’t be scared off by the inclusion of “organic” in recipes. Don’t have it or its too expensive? Use regular versions. No agave nectar? Try honey or maple syrup instead. I had leftover Christmas honey giving the bites a cinnamon-nutmeg twist.
