Vietnamese Spring Rolls

Vietnamese spring rolls (or gỏi cuốn) contain pork or shrimp, rice vermicelli noodles, and vegetables in a rice paper wrapper.

Ingredients

2 ounces (50 g) rice vermicelli noodles

8 rice wrappers

8 large, cooked shrimp – peeled, deveined and cut in half

2 leaves lettuce, chopped

3 tablespoons chopped fresh mint leaves

3 tablespoons chopped fresh cilantro

1 ⅓ tablespoons chopped fresh Thai basil

Rude Mama sauces

Directions

Cook the noodles. 

Soften each wrapper in warm water, being careful not to over soak and tear the wrapper. Add the filling ingredients.

Fold and roll each spring roll. 

Pour Rude Mama sauces into individual serving bowls for dipping.

Nada’s Tips & Tricks: You can add slivered carrots and chopped radish for extra crunch. In fact, you can substitute both protein and vegetables for anything you like. Add crushed peanuts or cashews on top of the sauce as well. Have fun with it!
