Vegan Gyro with Tzatziki

from Everything Tofu

Ingredients

Tzatziki
1⁄2 cup (125 mL) Soft Tofu Sour
Cream or your choice of sour cream
2 garlic cloves, finely grated
1 Lebanese cucumber or ½ English cucumber, diced
1 tbsp chopped fresh mint
Salt and pepper

Mediterranean Tofu

1 lb (454 g) medium-firm tofu, cut into strips

2 tbsp (30 mL) olive oil

1 tbsp white balsamic vinegar

½ tsp garlic powder

1 tsp dried oregano

1 tsp dried basil

1 tbsp cornstarch

Salt and pepper

Gyros
4 pita breads
1 tbsp vegetable oil (optional)
1⁄2 head romaine lettuce, finely
chopped (about 2 cups/100 g)
1 red onion, cut in strips
2 tomatoes, sliced

Directions

Tzatziki: In a bowl, combine the sour cream, garlic, cucumber and mint. Season with salt and pepper to taste. Set aside in the fridge.

Mediterranean Tofu: Place all the ingredients in a bowl and stir to coat the tofu well.

In a large nonstick skillet over medium-high heat, cook the mixture, turning the tofu strips halfway through, for 10 to 12 minutes or until nicely browned and crispy.

Gyros: If desired, heat the pita breads. In a large skillet over medium heat, heat the oil and toast the pitas, turning them halfway through, for 4 minutes or until lightly toasted.

Evenly spread the tzatziki on each hot pita. Top each with lettuce, red onion, tomato and Mediterranean tofu. Fold the pitas in half to make the gyros.

Serve right away.
