from What’s for Supper?
With the leftovers from Thanksgiving, this recipe puts a new twist on continuing the comforting taste of the festive meal.
Ingredients
2 cups chopped, cooked turkey or chicken
1 cup shredded cheese of choice
2 Tbsp all purpose flour or cornstarch, plus more for sprinkling
2 Tbsp butter
½ tsp black pepper
½ tsp sea salt
½ cup chicken or vegetable broth
½ cup milk of choice or cream
1 medium onion, chopped
1 garlic clove, pressed or grated
1 cup mixed frozen vegetables
1 homemade or store-bought pastry
Directions
Place the butter in a large saucepan on a medium heat and let it melt. Add the onion and fry until it is partially cooked. Add the flour or cornstarch and stir to combine. Add the broth, salt, pepper, garlic and milk. Continue stirring until the sauce starts to thicken.
Add the vegetables and turkey or chicken and fold together until it is well coated.
Cut the pastry dough into six pieces. Place a piece of parchment paper on the counter, sprinkle with flour, then roll each piece out into an oval about 6 inches long on the floured paper.
Scoop about ½ cup of the turkey filling onto one side of the pastry, fold the other end over the mixture, and pinch the sides together. Continue with the remaining dough. Place the pastries on a parchment-paper-lined baking sheet.
Grease the tops of the pastries and bake in a preheated 375F oven for 40 minutes until golden brown.
Serve with gravy. Or let the pastries cool and wrap them for school or work lunches.
Notes: Having all ingredients measured and ready before starting makes this recipe a snap. Making the pastry beforehand and letting it cool in the refrigerator helps to ensure flakier pastry.
Nada’s Tips & Tricks: I’m not a baker so store bought pastry is my go-to. You can purchase pie pastry and cut each layer in half for larger pies or into quarters for smaller samosa-style handhelds. Use different meat and vegetable combinations to change up the pies for any time of the year.
