The cookbook The Almighty Cod: More Than Just Fish and Chips by Jennifer Leigh Hill delves into the world of Atlantic cod, highlighting its significance in Newfoundland and Labrador cuisine. Jennifer Leigh Hill is a seasoned travel writer who embraces life on the road, often residing in her RV for most of the year. Her adventures have taken her across the vast landscapes of Newfoundland, both on land and at sea. In 2008, she embarked on an unforgettable journey around the island aboard an icebreaker. Ten years later, in 2018, she traversed Newfoundland from North to South and East to West in a 24’ Class C RV, with her faithful dog serving as her co-pilot.

Following her explorations, Jennifer compiled her experiences into a delightful cookbook titled Newfoundland’s Best Breakfasts and Brunch: Recipes from the Rock’s B&Bs. She is a frequent contributor to the magazine “Snowbirds and RV Travellers,” sharing her insights and experiences from her travels.
