Thai Chicken Salad

Enjoy this simple, fresh and crunchy salad that gets plenty of flavor from grocery store conveniences.

Ingredients

½ cup prepared sundried tomato salad dressing

1/3 cup crunchy peanut butter

½ tsp black pepper

2 cups cooked chopped chicken

6 cups coleslaw mix

1 cup lightly packed chopped cilantro

Directions

In a large bowl, combine salad dressing, peanut butter and pepper. Add chicken, coleslaw and cilantro; toss to evenly coat.

Tip: Use the cilantro stems as well as the leaves for texture and flavor.

Tip: The chicken can be shredded, sliced or cubed.

Makes 6 servings

Nada’s Tips & Tricks: Such an easy but flavorful salad. Perfect with a glass of Pinot Grigio on the back deck! Our family tried it as a side with a roasted chicken – some thought the peanut butter was too strong while others loved the Thai influence…adjust the peanut flavour accordingly.
