Sweet Potato Salad

I can see Ruby making this dish for her guests…

Ingredients

Salad

Three med or two large, sweet potatoes, peeled and cubed

1 to 1½ cups feta cheese, cubed

1 small can black beans, drained and rinsed

1 sweet onion sliced into half rings

4 boneless chicken thighs cut into pieces

Dressing

½ cup extra virgin olive oil

¼ cup red wine vinegar

2 tablespoons honey

1 large teaspoon mustard

Salt and pepper

Whisk to emulsify

Directions

Place sweet potatoes in air fryer and sprinkle with olive oil, salt and pepper. Cook until tender approximately 18-20 minutes

Place chicken in air fryer and sprinkle with olive oil, salt and pepper. Cook until done 15-20 minutes

Put chicken and potatoes in a salad bowl and add feta, black beans, and half rings of onion

Pour dressing over top and stir.

Nada’s Tips & Tricks: You can save time by purchasing pre-peeled and sliced sweet potatoes or squash as well as packaged, flavoured cooked chicken. Made this for a ladies’ lunch, served with a cold Chardonnay – perfect!
