from I Have a Love Story
Adapted from the Fairmont Hotel Macdonald (Edmonton) recipe, this version is what Natalie likes to serve her husband Donnell…who still loves it after many years of eating it!
Ingredients
Pudding:
1 1/3 cups water
1 1/3 cups seeded dates, coarsely chopped
1 tsp baking soda
1/3 cup softened butter
¾ cup brown sugar, packed
2 large eggs
1 cup all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
Warm Caramel Sauce:
½ cup heavy whipping cream
½ cup butter
½ cup brown sugar, packed
Directions
Pudding: Preheat oven to 350F/180C.
Bring the water to a boil. Add the dates and stir. Then, reduce temperature to medium and allow to continue boiling without stirring for about 5 minutes.
Remove from heat and add the baking soda. Stir then set to the side.
In a large bowl, cream the butter and sugar. Add the eggs, flour, baking powder, cinnamon and date mixture, incorporating well.
Pour into a greased 8-inch springform pan. Bake in the oven for 50-55 minutes or until a toothpick inserted in the centre comes out clean.
Sauce: Combine the ingredients in a saucepan.
Bring to a boil. Reduce temperature to medium and allow to continue boiling without stirring for about 5 minutes.
Remove from heat and stir until smooth. Pour warm sauce over individual slices to serve.
Total time: 1 hour and 10 minutes
