My childhood involved two types of snowballs. The first kind was cold and stung when it hit you in the face. The second kind was much sweeter and made you smile when you stuffed it in your face! My mother made snowballs every Christmas and they are, for me, synonymous with the holiday season. Personally, I’ve always preferred my snowballs ice cold, straight out of the freezer. Maybe it’s something to do with the name…
Ingredients
½ cup coconut oil
½ cup almond milk
½ cup coconut sugar
3 Tbsp cocoa powder
1 tsp vanilla extract
½ cup coconut, plus ½ cup for rolling
2 ½ cups rolled oats
Directions
Melt coconut oil, almond milk, sugar and cocoa powder together over medium heat in a medium-sized pot. Once melted and ingredients are combined, remove from burner and stir in vanilla.
Add ½ cup of coconut and rolled oats and combine ingredients.
With a tablespoon, scoop out mixture and roll into small balls. Then roll balls into the remainder of coconut to coat the outside.
Place balls on a cookie sheet lined with parchment paper and let chill in the refrigerator for 1 hour.
These can be stored in the refrigerator or freezer.
Makes 28 balls
Nada’s Tips & Tricks: This recipe is the healthier version. Condensed milk can be used instead of almond milk. You can use sprinkles to coat the balls, icing sugar or chocolate shavings. I’ve also added maple syrup, used crushed graham crackers instead of rolled oats, and used white chocolate instead of the cocoa. So many variations…have fun with it!
