from A Spice Affair
Roast beef is a great choice for a holiday feast!
Ingredients
For the Roast Beef
2-2.5 kg Prime Rib Roast or beef roast of your choice (4-5 lb)
8 tbsp unsalted butter, room temperature
1 ½ tbsp A Spice Affair’s Roast Beef Seasoning
1 tbsp fresh rosemary, chopped
3 garlic cloves, minced
1 tsp Himalayan Pink Salt
1 tsp Black Pepper

For the Potatoes
8 medium potatoes
¼ cup olive oil
2 tbsp melted butter
3 cloves garlic, minced
1 tbsp parsley, chopped
1 tsp A Spice Affair’s Herbs of Provence or Greek Herbs
1 tsp A Spice Affair’s Lemon Pepper
1 tbsp lemon juice
1 tbsp honey
¼ tsp Himalayan Pink Salt

Directions
For the Potatoes:Preheat oven to 450F.Cut ⅛ slits in the potatoes without cutting all the way through. Combine potato ingredients.Place potatoes in roasting pan and brush with ⅔ of dressing mixture, reserving ⅓ for basting. Bake for 1 hour or until tender and crispy. Baste at halfway point.
For the Roast Beef: Preheat oven to 450F and line a baking tray or skillet. Combine butter, Roast Beef Seasoning, rosemary, garlic, salt and pepper in a small bowl until smooth. Use a spatula to spread butter mixture over the entire roast. Roast in oven uncovered for 15 minutes. Reduce heat to 325F and roast an additional 1 hour and 45 minutes (about 15 minutes per lb). Remove from oven and transfer to plate to let rest 15-30 minutes before slicing.
