Pork Chops with Apple Curry Sauce

We’ve all had pork chops with apple sauce…now step it up a notch with a curry twist.

Ingredients

6 boneless pork loin chops

1 cup apple butter

1 Tbsp curry powder

1 tsp Dijon mustard

¼ tsp each, salt and pepper

3 large apples, peeled and sliced

½ cup onions, sliced

2 Tbsp cider vinegar

Directions

Sauté the pork in oil or butter until brown on both sides.

In a bowl, combine the apple butter, curry, mustard, salt and pepper and spoon over pork chops. Cook on medium heat until pork is slightly pink, about 10 minutes. Remove chops, leaving the sauce.

Add apples, onions and vinegar to sauce. Cover and cook for 5 minutes or until apples are soft.

Return pork to pan and cover with sauce. Turn off heat and keep warm until ready to serve.

Nada’s Tips & Tricks: Adjust your curry with the heat level you prefer. You can also add more if its not hot enough. Don’t like curry? Try paprika or tamarind. Use any apple that softens quickly like Golden Delicious or McIntosh. Serve over egg noodles, rice or with garlic mashed potatoes.
