Plantain Pecan Bake

Freshness tip: Place turkey breast tenders in the fridge to thaw the night before. You can do this at the same time that you start soaking the pecans.

Variations: Low salicylate: replace zucchini with celery. Low oxalate: replace plantain with granny smith apple. AIP: omit the pecans and add more zucchini and omit nigella seeds.

Tip: If you can’t find plantains, then granny smith apples are a good replacement. Nigella seed has antihistamine properties, but if you can’t find it then replace it with onion powder.

Ingredients

Water and salt for soaking

1 teaspoon nigella seeds

1 cup (125 g) soaked pecans (overnight)

3 large (1 kg) plantains, sliced

3 medium zucchinis (750 g)

1 lb (450 g) turkey breast tenders, chopped

1 clove garlic, minced or grated

1 teaspoon Himalayan or sea salt

3 tablespoons avocado oil

1 tablespoon maple syrup

Directions

Soak the pecans in water with a pinch of salt for 8 hours or overnight. After 8 hours, drain the soaking water and rinse.

Preheat the oven to 450°F (230°C). Prepare a large, rimmed baking sheet with a silicone mat or parchment paper. You can also use 2 smaller baking sheets.

Prepare the nigella seeds by grinding in a grinder or mortar and pestle.

Place the pecans into a large mixing bowl. Peel and slice plantains into ½-inch (1.5- cm) thick pieces. Add to the mixing bowl. Add the chopped zucchini, turkey, garlic, salt, avocado oil, and maple syrup. Stir well.

Place the contents of the bowl onto the baking sheet, spread out evenly and sprinkle with the ground nigella seeds.

Bake for 20–25 minutes. Plantains should be soft and starting to brown around the edges.
