from One Potato Two Potato
No picnic, barbecue or Sunday family gathering would be complete without potato salad. Every country has its own special recipe. The Party Potato Salad is great for summer barbecues.
Ingredients
10 cups sliced cooked potatoes
¼ cup vegetable oil
½ cup wine vinegar
1 tsp salt
1/8 tsp pepper
1 tsp chives
8 slices bacon, cooked until crisp, then crumbled
4 hard-cooked eggs, diced
1 cup sliced celery
¼ cup chopped onion
¼ cup chopped green pepper
½ cup sour cream
½ cup mayonnaise
2 unpeeled English cucumbers, scored with a fork lengthwise and sliced thinly
Directions
Combine potatoes, vegetable oil, vinegar, salt, pepper, and chives. Mix and chill. Add remaining ingredients at serving time. Mix lightly.
Serves 10-12
Nada’s Tips & Tricks: Everyone has their family favourite of potato salad recipes. Add some sliced radishes and a little paprika on top for colour. I tried this one for our family reunion and it was a hit!
