This book talks about sandwiches and what better way to start a child’s day but a fun breakfast sandwich they can help make and then devour! Use any fresh berries that are in season, and when that is over, use frozen berries. Let the kids choose their favourite and they’ll gobble it all up!
Ingredients
2 slices bread
2 eggs
½ cup cream
Dash of cinnamon or vanilla
1 Tbsp butter
½ cup mixed fruit cream cheese (or another fruit flavour)
½ cup fresh mixed berries
3-4 Tbsp maple syrup
2 Tbsp icing sugar OR 1 scoop ice cream
Directions
Whip together the eggs, cream and cinnamon/vanilla. Melt butter in a frying pan on medium heat.
Soak the bread in the egg mixture until well covered on both sides. Add to the pan and fry the bread until slightly brown. Flip and brown the second side.
Place the bread on a plate and have the kids smother one side of the first slice with the cream cheese. Add a few berries, if desired. Top the second slice over the cream cheese.
Pile the berries on top of both slices and smother with maple syrup. Sprinkle icing sugar over the fruit or top with a scoop of ice cream. Go wild and enjoy both!
Nada’s Tips & Tricks: This is a great weekend activity with the kids. They’ll love to eat their own creations. Have other topping options available like flaked coconut, crushed nuts or chocolate chips. You can also substitute the cream cheese for peanut butter or Nutella.
