3 medium sweet potatoes, peeled and quartered
2 teaspoons orange zest, grated
1/3 cup orange juice
1 tablespoon pure maple syrup
1 tablespoon unsalted butter
¼ teaspoon cinnamon
½ teaspoon salt
Boil potatoes in a pot of water. Reduce heat and simmer until potatoes are very tender, about 20 minutes. Drain water and place potatoes in a bowl. Add orange zest, juice, maple syrup, butter, cinnamon and salt. Coarsely mash.

Nada’s Tips & Tricks:
The reaction to this recipe around our dinner table was split in half. For the traditionalists, they found the orange flavour off-putting. For those that don’t usually like sweet potatoes, LOVED the added citrus flavour and won them over to eating sweet potatoes.
