Homemade Applesauce

from My Nova Scotia Cookbook

Try using local apples. They can be found at a farmer’s market or can be picked by hand in season at many U-picks.

Ingredients

3 lbs of apples, washed, peeled, cored and chopped

½ cup apple juice

1 tsp salt

1/8 tsp cinnamon

1 Tbsp lemon juice

1 tsp vanilla

¼ cup white sugar

¼ cup brown sugar

Directions

In a pot, add apples, juice and salt. Simmer over medium heat until soft – approximately 20 minutes.

Remove from heat and mash with potato masher. Stir in cinnamon, lemon juice, vanilla and sugar. Continue to cook on medium heat for 3 to 5 minutes. Serve hot, or store in sterile glass jars and refrigerate.

Best apples for applesauce: Gravenstien, Cortland, McInotsh, Golden Delicious, Ida Red

Nada’s Tips & Tricks: I grew up on an apple orchard and we would use Spy apples but they are becoming harder to find. Check local tourism pages for U-picks in your area. There’s something satisfying about going into an orchard and choosing your own apples. A great family day outing!
