A few perfect ingredients – and a hot grill – are all it takes to transform ripe Niagara peaches into something unforgettable. Stuffed with creamy Comfort Cream cheese, wrapped in salty prosciutto, and kissed with honey and flame, these bites balance sweet, savoury and smoky in one stunning late-summer dish.
Ingredients
Oil, for brushing
4 ripe peaches, pitted and halved
5 ½ oz Niagara Comfort Cream cheese or double cream brie (1/2 cup)
8 slices prosciutto
½ cup wildflower honey, for drizzling
Flaky salt, for finishing
Sprigs of fresh rosemary, for garnish (optional)
Directions
Preheat a grill over high heat. Lightly oil the grates.
Fill a peach half with 1 tablespoon Comfort Cream (or brie). Wrap tightly with a slice of prosciutto. Repeat with remaining peaches. They can be prepared up to 3 hours ahead and refrigerated until you are ready to grill.
Place peaches, cut side down, onto the grill and grill for 1-2 minutes per side, until prosciutto crisps and peaches are lightly charred. Drizzle with wildflower honey and grill for another 1-2 minutes per side, until caramelized.
Transfer to a plate. Finish with flaky salt and a drizzle of honey. If desired, garnish with fresh rosemary sprigs.
Serve warm.
