Tomatoes are bursting in our gardens at this time of year and this recipe makes the perfect grab and go lunch for people on the run.
Ingredients
½ cup tomato juice or spaghetti sauce
2 tomatoes, quartered
1 apple, cored and quartered
½ cucumber, cut into chunks
1 tbsp chopped onion
¼ clove garlic
2 tsp chopped fresh cilantro
Directions
In a blender, combine tomato juice, tomatoes, apple, cucumber, onion, garlic and cilantro. Secure lid and blend (from low to high if using a variable speed blender) until smooth.
Nada’s Tips & Tricks: I like a little heat in my gazpacho and add a dash of hot sauce. Play with seasoning…a tsp of Italian herbs is also yummy.
