Frozen Yogurt Snacking Bark

I’m a big fan of freezer snacks. They don’t go stale in a few days, don’t dry out, and once prepped, mean you have a snack ready and waiting anytime you want it over the next few weeks (or even months!). This frozen yogurt snacking bark combines the protein and fat from Greek yogurt with the extra collagen from your favourite powder to support tissue recovery and healing. Sprinkle on top of your favourite nuts and seeds for mood- and breastfeeding-supporting omega-3 fats and berries for sweetness and antioxidants and you’re all set!

Ingredients

2 cups full fat plain Greek yogurt (or flavour of choice)

¼ cup maple syrup or honey

1 scoop collagen powder

1 tsp vanilla

½ cup frozen wild blueberries

¼ cup hemp seeds

¼ cup chopped almonds

Directions

Line a 13 × 19-inch sheet pan with parchment paper.

In a bowl, combine the yogurt, maple syrup or honey, collagen powder, and vanilla.

Spread yogurt mixture evenly across the prepared pan with a spatula.

Sprinkle the blueberries, hemp seeds, and almonds on top of the yogurt. Press berries down gently with a clean spatula to help them stick.

Transfer to freezer and freeze for 2 or more hours, then chop or break into bite-sized pieces. Keep in freezer bag for a ready-and-waiting snack.
