Figs With Ricotta & Honey

from The Nature of Play

When figs are fresh, they hardly need any preparation – but don’t let that stop you from trying this amazing combination.

Ingredients

6 ripe figs

6 Tbsp fresh ricotta

6 tsp runny honey

2 sprigs of thyme

4 Tbsp toasted flaked almonds

Directions

Tear figs in half and place on a plate. (For extra oozy sweetness, you can bake the figs on a sheet in the oven at 350F/180C for 10 minutes – but if you skip this step, they’re still wonderful cold.) Spoon a tablespoon of fresh ricotta onto each piece.

Drizzle with a teaspoon of honey and scatter the leaves from two sprigs of thyme, as well as a small handful of roasted flaked almonds,, across the plate. Serve!

Nada’s Tips a-& Tricks: I love recipes like this. Change up the sweetness by adding flavoured honey – I like hot honey for a little pizzaz. Different herbs and nuts (love pistachios with figs) for variations. Great addition to a summer charcuterie board or keep it in mind for fall and winter celebrations.
