Dukkah-Inspired Nutty Seasoning Blend

Dukkah is a wonderfully fragrant combination of roasted nuts, seeds and spices that can be used along with, on top of, or inside a host of other dishes. The Middle Eastern flavours of this seasoning complement most savoury dishes and add texture and crunch quite quickly. One of my favourite ways to eat this blend is stirred into olive oil with bread for dunking.

Ingredients

1 tsp olive oil

½ cup pistachio nuts, shelled

¼ cup sesame seeds

1 Tbsp fennel seeds

2 tsp cumin seeds

2 tsp coriander seeds

2 tsp black peppercorns

½ tsp salt

Sprinkle of sugar

Equipment

Mortar and pestle (or spice grinder)

Directions

Place a skillet on the stove, turn the heat to medium, and add the oil. Add the pistachios and sesame seeds to the pan and gently toast for 5 minutes. Be careful not to burn the mixture. Set aside.

In the same pan, toast the fennel seeds, cumin seeds, coriander seeds and peppercorns until the aroma changes, about 3 minutes. Set aside to cool completely.

Once everything is cool, crush and stir it all together with the salt and sugar. I prefer a mortar and pestle here because they allow me to control the texture. You could also use a spice grinder but leave the setting to coarse. The whole bits add that distinctively warm and crunchy flavour that dukkah is famous for.

Variations

Swap out the pistachios for peanuts for a more economical and planet-friendly option.

Nada’s Tips & Tricks: Play around with the ingredients and portions. I like to add hot chili flakes for a little pizzaz. Dukkah seasoning is hard to find so making your own will ensure you always have some on hand…one of my favourite blends!
