These were the brownies we fed to the Dragons when we met them on Dragons Den… they were a big hit! Honestly, anyone I’ve ever served this recipe to, LOVES them and swears they taste better than those made with refined sugar.
Ingredients
½ cup chopped pitted dates
1 tsp baking soda
¼ cup LIVA date syrup
2 large eggs
½ cup butter or coconut oil
1 tsp vanilla extract
1 ¼ cups LIVA date sugar/ powder
1/3 cup cocoa powder
½ cup almond flour
½ tsp baking powder
¾ cup chocolate chips
Directions
Preheat the oven to 340 degrees F. Line an 8-inch by 8-inch baking pan with parchment paper.
Combine the dates with 1/4 cup water, LIVA date syrup and baking soda in a small pan and bring to a gentle boil. Simmer for 1 minute, then add the butter and stir until melted.
Remove from the heat and mash the dates with a fork to a creamy consistency.
Stir in the eggs and vanilla extract until well combined.
In a separate bowl, sieve or whisk together the date sugar, cocoa powder, almond flour and baking powder and add to date mixture. Stir until smooth. Stir in the chocolate chips or chunks.
Smooth into the prepared pan and bake until just set in the middle and begins to come away from the sides of the pan (about 40 mins).
Leave to cool fully before cutting into squares and dusting with cocoa (if using).
They will keep for 2 weeks in an airtight container, or 3 months in the freezer.
