from Dinner on Mars
I asked author Evan Fraser for his favourite recipe and he tells us, “All my fav recipes are old (e.g. from family cookbooks that go back a few generations). Salad, cell-sashimi and an algae shake is what we’ll eat on Mars! Not really recipe fodder – but if you want a nod to the old I think you’ll like our family cottage pudding recipe courtesy of my grandmother.”
Ingredients
½ cup butter
1 cup white sugar
1 egg
1 ½ cups flour
2 tsp baking powder
½ cup milk
Caramel Sauce:
1 Tbsp butter
¾ cups brown sugar
1 cup boiling water
2 tsp cornstarch
Pinch of salt
Directions
Preheat oven to 350F degrees.
Cream butter and sugar. Add egg and beat until light.
Sift flour and baking powder and add alternatively with milk.
Bake for 30 minutes.
Caramel Sauce:
Cook butter and brown sugar until it begins to brown. Add boiling water.
Mix cornstarch and salt in ¼ cup of cold water. Add to sauce and allow to boil for 5 minutes.
Serve caramel sauce over the pudding.
