Chow Chow

A traditional condiment loved by Nova Scotians.

Ingredients

36 medium green tomatoes, sliced

3 lbs (1.5 kg) onions, peeled and sliced

½ cup (125 mL) coarse salt

4 cups (1 L) apples, peeled, cored and chopped

3 ½ cups (875 mL) granulated sugar

2 cups (500 mL) white vinegar

¼ cup (50 mL) pickling spice

Directions

In a large bowl, alternate layers o sliced tomatoes and onions, sprinkle each layer lightly with coarse salt. Invert a plate on top of the vegetables, pressing firmly. Let stand overnight.

In the morning, drain liquid, place mixture in a colander and rinse under cold running water, and then drain.

In a large saucepan or soup pot, combine apples, sugar, vinegar and pickling spice (tied in a cheesecloth bag). Add tomatoes and onions. Bring to a boil, reduce heat and then allow to simmer, stirring occasionally, for approximately 30 minutes or until onions become translucent.

Remove spice bag and pour immediately into sterilized jars and seal.

Makes approximately 16 cups (4 L)

Nada’s Tips & Tricks: This is a great recipe for all those green tomatoes left on the vine just before the first frost.  You can make your own pickling spice by combining mustard seeds, allspice berries, coriander seeds, bay leaves, cinnamon sticks, cloves and black peppercorns.
