Cherry & Almond Cheesecake Square

Substitute any jam or dessert topping…Jingleberry Jam or Cranberry Raspberry works perfectly for the holiday season!

Ingredients

Crust:

½ cup sugar

½ cup soft butter

1 ¼ cup all purpose flour

Filling:

1 – 8 oz pkg cream cheese

½ cup sugar

½ tsp almond extract

1 egg

2 Tbsp (+ 2 more for topping) Yummies in a Jar Cherries & Almond Jam

Directions

Heat oven to 350 degrees F. Spray 9″square pan with nonstick cooking spray. 

Crust: Mix till crumbly then press in bottom of square pan. Bake 15 – 18 minutes till edges are light golden brown.

Filling: Combine all except the jam in a bowl and beat well. Pour over partially baked crust. Using the tip of a spoon, swirl jam lightly into the mixture. Return pan to oven and bake an additional 15 – 20 minutes till filling is set.  Cool 30 minutes.

Topping: After square is cool, spread remaining 2 Tbsp jam evenly over the top, refrigerate 30 minutes, cut into squares.

Nada’s Tips & Tricks: This is one of those recipes that’s easily makes a lovely presentation for a large crowd. Even for smaller soirees this holiday season, second helpings will be the norm so the square will go quickly. Substitute any jam that mirrors the season, and you have variations that work all year. Put this one on your favourite list!
