from Spicing Up the Cariboo
Many ethnic culinary influences were incorporated into the Cariboo culture, one being Switzerland’s Verena Berger. This is her family’s favourite recipe.
Ingredients
1/3 cup (80 mL) butter
1 cup (250 mL) white flour
2 cups (475 mL) scalded milk
6 eggs
½ lb (250 g) cheese – spicy Havarti or aged Gouda, grated
Pinch of salt
Directions
Preheat oven to 360F (180 C).
Melt butter in a stainless steel pot over medium heat. Mix in flour until combined with butter, then add hot milk. Keep stirring until the sauce thickens.
Beat each egg individually and add to sauce, stirring with each addition. Add the grated cheese and salt. Keep stirring until the cheese is melted and the contents start to detach from the sides of the pot.
Immediately pour into buttered ovenproof dish and bake for about 30 minutes.
Serves 2
Nada’s Tips & Tricks: Once you have the basic recipe mastered, start playing with the ingredients by changing up the cheese and adding herbs and spices. Add a salad paired with a glass of white wine – the perfect lunch to enjoy on the back deck!
