Bachelor Bannock

from Memories of a Metis Settlement

Early settler and bachelor George Harvey was a veteran of the First World War. This recipe was named in his honour.

Ingredients

3 cups flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon sugar

½ cup milk

½ cup water

1 egg

Directions

Preheat oven to 350F/177C.

In one mixing bowl, combine the flour, baking powder, salt and sugar. In a second bowl, mix together the milk, water and egg.

Pour wet ingredients into the dry ingredients and mix well. Add water until it looks like cake dough and pour into a greased pan.

Bake about 1 to 1 ½ hours, depending on the thickness of the dough.

Nada’s Tips & Tricks: You can add ingredients to this basic recipe like raisins or dry fruit for a sweet Bannock; or chopped olives and herbs for a more savoury version.
